P90-based Cloudy Emulsion Technology for Beverages
Conventionally, cloudy beverage formulators utilise clouding oil to impart cloudiness to beverages. Solubilising the oil into beverages is thus the main challenge that formulators have attempted to solve through the common method of “density matching”. This method works through the matching of densities of the clouding oil and the beverage to prevent creaming and phase separation. Such method is often complex and time consuming.

InstaCloud is Compass Foods’ innovative technology to encapsulate coconut oil into stable emulsion particles of desired cloudiness. The emulsion is neutral in sensory profile, thus it does not affect the original sensory attributes of the beverages.
